Trahana is a hard, pebble-like pasta resembling a coarse couscous and generally made from flour, buttermilk, whole milk and yogurt. It can be cooked as a hot cereal or used to thicken many hearty soups and stews.
Durum wheat semolina, yogurt (370g per kilo of semolina), milk butter (28g per kilo of semolina), salt 2% max.

PREPERATION / COOKING / SERVING SUGGESTION
Directions: Boil 7 – 7.5 cups water. Add 1 tsp. salt. Add 1 cup sour Trahanas. Cook for 15 minutes while stirring occasionally.
