Description
Krinos capers are the flower buds of the caper bush. They originate from the North African coast of the Mediterranean Sea and Europe. The buds are handpicked, sun-dried, and pickled in vinegar brine to preserve their freshness and zestful flavour. Generally chopped to add to sauces and dressings, their pungent flavours make them an excellent addition to traditional Mediterranean recipes such as veal, chicken, and fish dishes.

Greek capers, known as “kapari” in Greek, are the edible flower buds of the caper bush (Capparis spinosa), which thrives in the Mediterranean climate of Greece. These small, green buds are renowned for their sharp, tangy flavour and are a staple in Greek cuisine.
Every part of the caper bush is edible: the leaves, the buds and the fruit. And though there are some 250 types of caper bush in the world, including in such far-off places as India, Afghanistan, and the southwestern Mediterranean, the caper native to Greece is the only variety that grows wild and is not a product of specialized culture, contrary to capers shipped in from other Mediterranean countries (Turkey, Italy, France, Spain, Morocco), which are cultivated.
